Ingredients for Biryani rice cooking : 

Basmati rice : 2 cups

Shahi jeera : 1 tbsp

Salt for taste

water as required

Oil :  2-3 tbsp

Cloves  : 2

Cinnamon : 1

Bay leaves : 2

Mint leaves : 7-8

Cardamom : 2

Ingredients for Chicken Dum Biryani Recipe :

Boneless chicken : 600 gms

Oil : 3 tbsp(for deep fry)

Cumin seeds : 1 tbsp

Onion slices : 2

Green chillies : 3 slit

Salt for taste

Tomatoes :  1 cup, chopped

Turmeric powder :  1/4 tbsp

Ginger -garlic paste : 1 tbsp

Red chilli powder : 1 tbsp

Onions : 1, sliced and fried brown

Mint leaves : 5-6

Milk : 1/2 cup

Gram maasal :  1 tbsp

Thick yougurt : 1 cup

Coriander leaves : 1 bunch

Eggs – 4 boiled and sliced

Lemon : 1, squeezed

Steps to Prepare Chicken Gravy | Chicken Dum Biryani Recipe :

Take 600 gms chicken and marinate pieces with yogurt, 1/2 tbsp of garam masala, shah jeera 1/2 tbsp, mint leaves,turmeric, red chilli, coriander leaves, oil salt and fried onion. Keep it aside for 1 hour. Heat oil in a deep pan or pot, add bay leaf and the marinated chicken. Cover the pan with lid and let the chicken cook for 20 minutes. After 20 minutes, open lid and check the chicken tender or not. If chicken is tender then higher the flame and evaporate all the water which has come from chicken. When all the water evaporated fry the chicken till oil separates from masala. Now put the chicken aside.

Steps to prepare Biryani Rice:

Take a large vessel with 6 cups of water, some oil, remaining shah jeera, t it on heat and cover with lid. When water starts boiling add 1/2 tbsp garam masala and soaked rice. Let the rice to cook half. When rice is half cooked strain it in a large strainer.

Now take a large pan in which you wish to cook biryani, grease the pan with ghee and pour some rice at bottom and place half of chicken gravy over it, again spread remaining rice and remaining chicken over rice evenly. In middle of rice and gravy sprinkle saffron milk and fried onions evenly.

Repeat the process according to quantity and make more layers, and spread saffron milk on the top and cover vessel with lid or wheat flour dough. Place a big pan with having some water and make it heat for some time. On top of that simmer heat water place biryani pan and cook it for 30 minutes.
