How to prepare Motichur Laddu Recipe: An exotic north Indian sweet served for any occasion. This laddu is prepared from fine small boondi and made into balls.

Ingredients for Motichur Laddu Recipe- 
Senagapindi (Besan flour) : 2 cups
Rava (Semolina) : 3 tbsp
Panchadara (Sugar) : 2 cups
Nilu (Water) : 2 cups
Food colour(Orange) : 1 pinch
Yelakulu (Cardamom) : 10-15
Baking soda : 1 tbsp
Neyi (Ghee) : 2 tbsp
Jidipapu (Cashewnuts) : 1/4 cup
Badampapu (Almonds) : 1/4 cup
Pistapapu (Pistachios) : 1/4 cup
Oil for frying
Water as required

Step by step procedure to prepare Motichur Laddu Recipe:

Take bowl and mix 2 cups of besan flour, 3 tbsps of semolina, 1 pinch of food colour. To get softness for mixture add 1 tbsp of melted ghee. Gradually add water to the mixture and stir it well without forming lumps like dosa batter. Take a pan and pour oil, leave it for few mintes to get heat. Check if really oil is hot or not by dropping prepared dough. If dough sizzles in the oil and pops up to surface, it indicates oil is ready for use.
Take any grater or colander ladle for frying dough. Place ladle on the pan and pour dough into the ladle. Stir dough with spoon (Avoid stirring with hands as it will observe heat) so that dough drops will get into oil evenly (Do not move ladle in middle so that dough drops will shapes out). After stiring take out ladle and fry them until they become golden brown. Ensure they don’t make so crisp and hard. Take out fried  ones into tissue paper till oil is extracted from that.

Preparation of sugar syrup – 

Take equal amounts of sugar and water i.e; 2 cups in other pan and stir it untill the sugar melts and heta them till it turns into syrup. Make sure it should not turn into rounded syrup (Check if it forms single thread consistency). Now take the syrup from stove and dd cardamom powder. Crush cashew, almonds and pistachios, and add it to boondis. Mix it well and add sugar syrup to the mixture. keep the mixture aside for 15 -20 mins. Mean while, boondies will observe sugar syrup and it will buldge well.
After 20 minutes, you can see some syrup will come outside of mixture. Squeeze out the syrup and grind the mixture gently. Now apply ghee to your hands and make balls from preapred mixture. 

Ready!! Serve hot and sweet Motichur Laddu are ready to eat. Have a delighted occasion:

Serving: After preparation of making balls, garnish it with cashews or almonds on balls and serve it.
