Ingredients for Sweet Corn Pulav Recipe :
Basmati rice or regular rice : 1 cup
Sweet corn : 3/4 cup
Capsicum : 1/2 cup, chopped
Onions : 1 medium, chopped
Turmeric powder : one pinch
Ginger garlic paste : 1 tbsp
Green chilli : 2-3
Red chilli powder : 1 tbsp
Gram masala powder : 1tbsp
Cumin seeds : 1 tbsp
Potato : 2 medium, chopped
Salt : as required
Water : as required
Oil : 2 tbsp
Pepper powder : 1/2 tbsp
Coriander leaves : 1 bunch, chopped
Step by Step Procedure to make Sweet Corn Pulav/ Rice :
Wash and soak rice with water. Soak it for 20 minutes. Mean while, till rice soaks, wash sweetcorn kernels and drain them. Peel of potatoes, chop them in small size and after chopping immediately put them in salt water, as it turns into brown after chopping. Take pressure cooker, add washed corn kernels and chopped potatoes to the vessel, pour water required for boiling, and salt. Cook it for 3-4 whistles by covering it with lid. Take a pan, heat the 2 tbsp of oil. After heating, add cumin seeds, let it crackle, dont burn it. Chop 1 medium onion, slitt the 2-3 green chillies and add it to pan. Fry the added one untill it turns into golden brown.
Add ginger garlic paste and saute it. When paste mixes with oil, it will split out. cover with plate. As sweet corn and potato boils, take out from cooker and drain water. Keep them aside for few minutes for cooling. Now add soaked rice into cooker, add 2 cups of water. Cover it by lid and cook for 3-4 whistles. If ginger garlic paste fries, add 1 tbsp of garam masala, 1 /2 tbsp of pepper powder, salt, one pinch of turmeric powder, 1 tbsp of red chilli powder. Mix them nicely, as dryness of powders should go off. After mixing them weel, chop capsicum in small size and fry them. After frying them, add boiled sweet corn, potato to the mixture. Stir them nicely. Veggies have to absorbs added masalas and spices.

Now mixture is ready. Take out cooked rice and add it to sweet corn mixture. Mix it gently, Serve hot sweet corn pulav with raitha. Garnish pulav by sprinkling with chopped coriander leaves.
