Vangai Bath Recipe | How to prepare Vangai Bath Recipe step by step video:

How to make Vangai Bath recipe: Vangai bath is mostly famous dish from Karnataka. Vangai means brinjal, it will be available in big and width in size. Mostly, in Andhra and Telangana, brinjals will be big in size and round shaped one. We can prepare vangai bath in 20-30 minutes.

Ingredients for making Vangai Bath Recipe-

Rice : 1 cup
Brinjal : 250 gms
Tamarind : 10 gms
Mustard seeds : 1 tbsp
Groudnuts : 2 tbsp
Cuury leaves : 1 sprig
Turmeric powder : a pinch
Red chilli powder : 1 tbsp
Vangai bath masala powder : 2-3 tbsp
Salt :  as required
Water : as rewuired
Red chillies :  2-3, dry
Coriander leaves : 1 bunch, chopped
Cashews : 7-8 nos
Oil :  2 tbsp

Step by step procedure on how to make Vangai Bath Recipe – 

Take 1 cup of regular rice and soak it in water. Leave it aside for 30 minutes. Mean while, soak, 10 gms of tamarind in hot water for 20-30 minutes to make pulp out of it. After 30 minutes (Soak rice and tamarind before you start process of vangai bath recipe, for time constraint) , take a pressure cooker, add soaked rice to it and pour 2 cups of water. Cook the rice by covering with lid. Let it cook for 3-4 whistles on medium flame. Till the rice cooks, take soaked tamarind, squeeze it to get tamarind pulp. Strain it and keep aside. As rice is cooking, you can continue with next process. Take brinjals, rinse them with water and cut them vertically long pieces. As brinjals become brown in color immediately, after chopping as soon as add it to salt water.
Heat the pan with 2 tbsp of oil. Add mustard seeds, let them sizzle (Dont fry them longer time). Next add peanuts. Let it fry for few minutes. Along with peanuts you can add cashews too (You can prefer ghee for frying cashews seperately). Add  1 sprig of curry leaves, 2 red chillies and saute them well without burning. Add brinjals into pan and mix them nicely. Stir them occassionally, so it wont stick to pan. To cook the brinjals add salt and water. Leave them for few minutes. Now add 2 tbsp of vangai bath masala powder, squeezed tamarind pulp. and stir it well. Once the masala is cooked well off the stove. Take out cooked rice from cooker and fluff it. Add prepared vangai masala mixture to the rice. Mix it gently.

Ready!! Serve hot and spicy Vangai Bath Recipe:

Serving: Serve vangai bath with raitha and garnish it with corinader leaves and cashews.
