How to make Veg Biryani Recipe: Vegetable biryani is the famous dum biryani, when it contains whole spices and Indian masala. Basically it takes 40 minutes for preparation. For all the Veggies, here is the preparation method and ingredients required for the Veg Biryani Recipe. Have a look and prepare Biryani yourself. 

Ingredients for rice preparation:

  • Basmati rice : 3/4 cup(long grained rice)
  • Green Cardamoms : 3-4
  • Cloves : 2-3
  • Cinnamon : 1 small piece
  • Bay leaf : 1
  • Salt : 1 tbsp

Ingredients for Gravy preparation in biryani making : 

  • Potato : 1 cup, chopped 
  • Cauliflower : 1/2 cup, chopped
  • Carrot : 1/4 cup, chopped
  • French beans : 1/4 cup, chopped
  • Green peas : 1/4 cup, chopped
  • Green chillies : 2-3(seeded free chillies and cut it in middle of chillies)
  • Onion : 1, sliced
  • Cardamom : 1-2
  • Ginger-garlic : 1 tbsp, pasted
  • Cumin seeds : 1/2 tbsp
  • Turmeric powder : 1/8 tbsp
  • Gram masala : 1 tbsp
  • Coriander powder : 1 tbsp
  • Coriander leaves : 1 bunch
  • Curd : 1/2 cup, beaten
  • red chilli powder : 1 tbsp
  • Oil : 3 tbsp
  • Salt : 1tbsp

Ingridients for Veg Biryani Recipe (mix rice and gravy)

  • Fried onions :  1/4 cup
  • Saffron strand : 8-10 (Soak in warm milk)
  • Ghee :  1tbsp
  • Mint leaves : 10, chopped
  • Coriander leaves : 2 tbsp

Directions for preparing Biryani gravy :

Firstly, cut all vegetables into pieces(medium).  Heat 3 tbsp of oil in a pan with medium flame till become heat. Now, add sliced onions, 1-2 green chillies, 1 tbsp ginger-garlic paste, 1 green cardamom, 1/2 tbsp cumin seeds. Stir and fry them till onions turn into light brown. Add 1 cup of chopped potatoes, 1/2 cup chopped cauliflower and 1/4 cup chopped carrot. Stir it for 3-4 minutes. Add 1/4 cup green peas, 1/4 cup chopped french beans and salt for taste. Mix well and cook it by covering with plate till vegetables almost cooked. leave it for 5-7 minutes. To prevent sticking of vegetables stir it occasionally. If vegetables are cooked, add 1/2 tbsp of red chilli powder, 1/8 tbsp of turmeric powder, 1 tbsp of coriander powder and 1.4 tbsp of garam masala. Stir them so that all added ingredients will mix well. Leave ot for 2 minutes. Add 1/2 cup of beaten curs and 2 tbsp of chopped coriander leaves. Mix it well and cook for minutes till curd observes for every vegetable. Now gravy is ready. Keep it aside till rice is cooked.

Directions for cooking rice :

Take 3/4 cup of rice and wash it cleanly and soak it for 3-4 minutes. Cook rice in a deep pan or pot. When rice comes to boil, add 2 green cardamoms, 2 cloves, 1 piece of cinnamon, 1 small bay leaf and salt. Boil it for around 8-10 minutes or till rice cooks for 80%. Ensure rice should be fluffy and should not sticky.

Step by step procedure on how to make Veg Biryani Recipe :

As we have taken deep pan(flat heavy based button)/ pot we can form at least 4 layers (If you want in large quantity, proceed with more layers). Add half of the gravy into which you want to cook biryani and spread it evenly. All half of rice over gravy and spread evenly. Sprinkle half of saffron mixture and fried onion over it. Sprinkle 1 tbsp chopped coriander leaves and 4-5 chopped mint leaves. Again spread remaining half of gravy and remaining rice over gravy. Sprinkle remaining saffron mixture, fried onions, coriander leaves and mint leaves over it. Pour 1 tbsp ghee on sides of rice and cover the pan  or pot with a tight fitting lid(Alternatively, you can use wheat flour dough as a lid). Heat the tawa over low flame, put pan or pot on it and cook for 12- 15 minutes. After 15 minutes turn off flame and remove lid . Now, transfer layered vegetable to the serving plate.

Serving : You can serve hyderabadi dum biryani with raita or different vegetable gravies.
